Breakfast-Fast!

Breakfast is one of the most challenging meals for people to get in-and one of the most important! However, because of time, many of us tend to skip this meal in Lew of coffee or other quick, sugary fixes (cue doughnuts and bagels). Not that there's anything wrong with the occasional doughnut or bagel, but it becomes an issue when it becomes the primary source of fuel in the morning. As a working mom of two, soon to be three, I knew I needed to fuel myself properly if I wanted to function efficiently in my duties as 'mom' but also in my current profession. I took on the challenge of developing quick and easy breakfasts' that were high in quality ingredients as well as quick to make!

Breakfast #1: Egg white, turkey sausage & cheese muffin.
1/2 cup of Egg Beater's egg whites
2 Bob Evan's pre-cooked turkey sausage
1 Thomas whole wheat English muffin
A pinch of shredded jack cheese
(Optional: a few pieces of fresh spinach. I usually put spinach on my sandwiches-just forgot today!)
To start, I place the muffin in a toaster for a few minutes while I prepare the egg whites in a microwaveable bowl. I cook the sausage first, about 1-2 minutes, in the microwave. For the eggs, I place about a 1/2 a cup of egg beaters along with Mrs. Dash's garlic herb seasoning. I LOVE this seasoning! It's the perfect salt-free blend that makes anything taste amazing. Next, I microwave them for 30 second intervals, stirring each time, until I get the right consistency. After the eggs are done, I place them on the English muffin along with the sausage, a sprinkle of cheese and spinach. Wrap it in a paper towel and you're good to go!
